Pączki - Polish Custard Doughnuts

I tried to find some jelly doughnuts recipes that were healthy and not fried. I am not Polish but if they cook like this, I am eager to find out more cooking recipes from them. Pretty delicious, simple yummy, heavenly doughnuts.

Ingredients (Doughnuts)
  • 1 ½ Cups of purpose flour
  • ¼ Cup of sugar
  • ¼ tsp of salt
  • 1 Package of Instant Yeast
  • 2/3 Cups of milk
  • 3 tsp olive oil
  • 2 egg yolks
  • ½ tsp vanilla
  • ¼ Cup additional flour
  • Scrapper
  • Biscuit Cutter
Ingredients (Custard)
  • ½ cup of sugar
  • 1 tsp of corn starch
  • 1 cup of one percent milk
  • 1 egg yolk
Preparation
Add the dry ingredients first. Add the flour, Sugar, Salt, Yeast. Mix everything a little bit. Add the wet ingredients. Add the milk. Make sure that the milk is at least 120 degrees, oil, eggs yolks, vanilla. Mix everything well in a blender for about two minutes, using low speed, then medium speed and ended up with high speed. The mixture will be a little soft. At this point use the extra flour to thicken it up by adding the flour to the mix little by little. Make sure your blender is on at low speed. Lightly flour a surface and scrape it all the mix out in the top of a counter. The kneading process is easy if you use a scraper. Continue to add flour to the mix until it becomes smooth and elastic. Knead the dough at least 50 turns. Covered with plastic and let it rest for 10 minutes. Prepare a baking sheet and line it with parchment paper or with your fingers spread some flour onto the surface of the baking sheet. Unwrap the dough and roll it about ½ inch thick on a nice flour surface so it won’t stick. Use a 2 ½ round cutter, like a biscuit cutter, or anything round that might your for you. Deep the cutter into the flour every time you cut. Place the pieces on the baking sheet. At this point, you should have at least 12 doughnuts. Cover the doughnuts with a tea towel and let it rise in a warm place for about 45 minutes. Place the doughnuts in the oven for 10 minutes at 375 Fahrenheit. For the filling traditional is filled with jam, usually plum jam or any kind of jam. But at this time I will show you how to make Custard filling. While the doughnuts are rising, start making the filling, because the custard needs to cool down completely.
Preparation (Custard)
In a small saucepan mix the sugar, corn starch, and milk. Slowly pour in the milk, that way you will get no lumps. Slowly whisking the milk, take your time while doing this. Add the egg yolk, whisking all together. Once all is well mixed, transfer to the stove on medium-high. Bring it to a boil. Keep stirring to prevent lumps and burning. Do this for about one minute or minute ½ and is done. It will thicken as it cools down.

To coat the doughnuts

In a plastic bag pour 1/3 cup of sugar. On a separate container melt one spoon of butter. Brush the top of the doughnuts and toss the doughnut inside the bag while hot.

To fill the doughnuts

Fill the doughnuts by inserting the middle of the doughnuts with the help of an icing bag.
